Stuffed green pepper soup

While some things were a flop in the garden this year, the peppers took off. So, I used some to make soup last week. I love to do stuffed peppers, but this soup is much less work with a very similar taste.

6 beef bullion cubes
6 cups water
2 green bell peppers, diced
1 boil-in-bag rice
1 pound browned ground beef
1 cup pasta sauce
Pepper, Italian seasoning to taste


Place bouillon in water and bring to a boil.
In a separate pan, boil water and prepare boil-in-bag of rice according to directions.
Add green peppers, seasonings and pasta sauce to soup pot. Simmer about 20 to 30 minutes or until peppers soften.
Add beef and rice and simmer another five minutes.
