I miss the summer tastes

As summer neared the end, I got an invite to Niche Restaurant in Geneva for a media dinner. It was a five-course farm to table dinner to showcase the produce from their farm at Bull Run Estate. While some of the items we enjoyed remain on the menu, like the smoked hanger steak and Hasselman pork loin, the summer specialties are a memory until next summer rolls around. The compressed watermelon salad was exquisite - one of those culinary works of art that you can hardly bear to sink into. The warm tomato tart was a masterful blend of savory sweet tastes in the tomato jam paired with Parmesan and arugula. The flavors have been seared in that part of my brain that revisits it when I glance at this picture. So, for now I'll delve into the scents of fall and the comfort food that warms our souls, but I'll be anxiously awaiting the return of such summer treats. If you have the opportunity to dine at Niche, don't pass it up. It will impress you in a way that few suburban spots can.
