Chilaquiles: Round Dos

So, I posted recently on the chilaquiles my 9-year-old and I made recently at the suggestion of a friend. I made the first batch with some sunny side up and fried eggs on top, but my favorite is really scrambled eggs. So, I threw a plate together.

First, tear or cut corn tortillas into strips.

Heat a pan with olive oil and add tortillas, flipping until they crisp. Add some salsa and transfer to plate.

Whip up some scrambled eggs and lay on top.

Then garnish with tomato, green onion, cilantro, cheese or whatever else your creative little mind has a taste for. I put chicken breast on my husband's plate, but made mine meatless. It was muy bueno. :)
