Watermelon and Fresh Mint Salsa

Fresh salsa is a common thing on our table in the summer months, usually made with tomato and a variety of other ingredients. This time, it was a sweeter salsa. I made it as a side dish for a steak dinner we had and served it as a salad.

Then I made grilled salmon and it was an awesome topping!!! The flavors are so refreshing and colorful and a great combination.

About 1/8th of a seedless watermelon, diced
1/2 of a yellow pepper, diced
1/2 cucumber, diced
(Make sure to dice each item into very small pieces)
Freshly squeezed juice from a 1/2 lemon
About 6 - 8 leaves of fresh mint, chopped and a couple more leaves for garnish

Serve as a salad or use as a salsa topping on grilled fish.
