Fat Tuesday at Lansing Country Club


We'll, we are long out of Mardi Gras mode, but I had to share a few pics from a fun Fat Tuesday Bash held at Lansing Country Club. I'm on the board of directors of a non-profit community events organization and this is one of the fun community events that we plan each year.

The country club does a great job of carrying out the theme in the buffet, which included jambalaya, gumbo, blackened catfish, red beans & rice, panini/mufaletta sandwiches and more. There were also some delicious goodies on the dessert from Calumet Bakery, including pazkis of many flavors.

Unfortunately the country club is being sold and it's future is uncertain at this time. However, they do have some nice events open to the public, so you can still get there to enjoy some good food on the beautiful grounds.

Coming up are the Easter Sunday and Mother's Day buffets. They're also open to the public on Fridays for their fish fry. Last year my family enjoyed the buffet there on Easter and really enjoyed it. Check out Lansing Country Club in Lansing, IL on Facebook for information on upcoming events.
